Preheat your oven to 350°F (175°C).
In a bowl, mix flour, baking soda, and salt. Set aside.
In another bowl, cream the butter, granulated sugar, and brown sugar until light and fluffy.
Add the egg, vanilla extract, and peppermint extract to the butter mixture and mix well.
Gradually add the dry ingredients to the wet mixture, mixing until just combined.
Chill the dough for 30 minutes in the refrigerator.
Roll the dough into 1-inch balls and place them on a baking sheet lined with parchment paper.
Flatten each ball slightly with the bottom of a glass.
Bake for 10-12 minutes, until edges are lightly golden.
Allow cookies to cool completely before icing.
Mix powdered sugar with water and food coloring for icing; decorate cookies as desired.
Top with crushed peppermint candies before the icing sets.
