Ingredients

  • 2 1/4 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 cup unsalted butter softened
  • 1 cup granulated sugar
  • 1/2 cup brown sugar packed
  • 1 large egg
  • 1 tsp pure vanilla extract
  • 1 tsp peppermint extract
  • 2 cups powdered sugar for icing
  • Green food coloring
  • Crushed peppermint candies for garnish

Instructions

  • Preheat your oven to 350°F (175°C).
  • In a bowl, mix flour, baking soda, and salt. Set aside.
  • In another bowl, cream the butter, granulated sugar, and brown sugar until light and fluffy.
  • Add the egg, vanilla extract, and peppermint extract to the butter mixture and mix well.
  • Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  • Chill the dough for 30 minutes in the refrigerator.
  • Roll the dough into 1-inch balls and place them on a baking sheet lined with parchment paper.
  • Flatten each ball slightly with the bottom of a glass.
  • Bake for 10-12 minutes, until edges are lightly golden.
  • Allow cookies to cool completely before icing.
  • Mix powdered sugar with water and food coloring for icing; decorate cookies as desired.
  • Top with crushed peppermint candies before the icing sets.
