Ingredients

  • 2 cups cooked pasta fusilli or penne
  • 1 cup cherry tomatoes halved
  • 1 cucumber diced
  • 1 bell pepper chopped
  • 1/2 red onion thinly sliced
  • 1/2 cup black olives sliced
  • 1 cup mozzarella balls
  • 1/4 cup fresh basil chopped
  • 1/4 cup olive oil
  • 2 tablespoons balsamic vinegar
  • Salt and pepper to taste

Instructions

  • Cook the pasta according to package instructions until al dente.
  • Drain the pasta and rinse under cold water to stop the cooking process.
  • In a large mixing bowl, combine the cooked pasta, cherry tomatoes, cucumber, bell pepper, red onion, and black olives.
  • Add the mozzarella balls and fresh basil to the bowl.
  • In a separate bowl, whisk together olive oil, balsamic vinegar, salt, and pepper.
  • Pour the dressing over the pasta salad mixture.
  • Toss gently to combine all ingredients well.
  • Chill the pasta salad in the refrigerator for at least 30 minutes before serving.
  • Adjust seasoning if necessary before serving.
  • Serve cold or at room temperature.
