Ingredients

  • 1 lb baby potatoes
  • ½ cup grated Parmesan cheese
  • ¼ cup breadcrumbs
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp paprika
  • Salt and pepper to taste
  • Fresh herbs for garnish

Instructions

  • Preheat the oven to 400°F (200°C).
  • Wash the baby potatoes thoroughly and dry them.
  • In a large bowl, mix olive oil, garlic powder, paprika, salt, and pepper.
  • Add the potatoes to the bowl and toss until well coated.
  • In another bowl, combine Parmesan cheese and breadcrumbs.
  • Roll each potato in the cheese mixture until fully coated.
  • Place the coated potatoes on a baking sheet lined with parchment paper.
  • Bake for 25-30 minutes, or until golden brown and crispy.
  • Remove from the oven and let cool slightly.
  • Garnish with fresh herbs before serving.
