In a small bowl, sprinkle gelatin over cold water and let it bloom for 5 minutes.
In a saucepan, combine heavy cream, milk, and sugar over medium heat.
Stir until the sugar dissolves, but do not let it boil.
Remove from heat and stir in the vanilla extract.
Add the bloomed gelatin to the warm cream mixture and stir until completely dissolved.
Pour the mixture into individual serving molds or cups.
Cover with plastic wrap and refrigerate for at least 4 hours, or until set.
To serve, gently run a knife around the edges of the molds.
Invert onto a plate and garnish with fresh berries.
Drizzle with chocolate or caramel sauce if desired.
