Ingredients

  • 2 salmon fillets about 6 oz each
  • 2 tablespoons olive oil
  • 1 lemon juice and zest
  • 2 cloves garlic minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried dill
  • Fresh parsley for garnish
  • Assorted vegetables e.g., asparagus, cherry tomatoes

Instructions

  • Preheat your oven to 400°F (200°C).
  • Line a baking sheet with parchment paper or lightly grease it.
  • In a small bowl, whisk together olive oil, lemon juice, garlic, salt, pepper, and dill.
  • Place the salmon fillets on the prepared baking sheet.
