Ingredients

  • 4 large onions peeled
  • 4 cups vegetable broth
  • 1 cup diced tomatoes
  • 1 bell pepper chopped
  • 2 cloves garlic minced
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 tablespoon olive oil
  • Fresh herbs for garnish
  • Optional: chili flakes for heat

Instructions

  • Heat olive oil in a large pot over medium heat.
  • Add minced garlic and sauté until fragrant.
  • Add chopped bell pepper and cook until softened.
  • Pour in the vegetable broth and bring to a boil.
  • Carefully add the peeled onions to the broth.
