Ingredients

  • 2 cups mixed greens
  • 1 cup cherry tomatoes halved
  • 1 cup green beans trimmed
  • 1 can 6 oz tuna, drained
  • 2 hard-boiled eggs quartered
  • ¼ cup black olives
  • ¼ cup extra virgin olive oil
  • 2 tablespoons red wine vinegar
  • Salt and pepper to taste
  • Fresh basil leaves for garnish

Instructions

  • Wash and dry the mixed greens thoroughly.
  • Boil the eggs for 10 minutes, then cool in ice water.
  • Trim and blanch the green beans in boiling water for 3-4 minutes.
  • Place the green beans in ice water to stop cooking.
  • Combine mixed greens and cherry tomatoes in a large bowl.
  • Add drained tuna and break it into pieces.
  • Arrange hard-boiled egg quarters on top.
  • Scatter black olives over the salad.
  • Drizzle with olive oil and red wine vinegar, season with salt and pepper.
  • Toss gently and garnish with fresh basil leaves.
