Ingredients

  • 4 chicken pieces drumsticks or thighs
  • 1 cup buttermilk
  • 1 cup all-purpose flour
  • 2 tablespoons paprika
  • 1 tablespoon cayenne pepper
  • 1 teaspoon garlic powder
  • Salt to taste
  • Vegetable oil for frying
  • 4 tablespoons melted butter
  • Additional cayenne for hot sauce

Instructions

  • Marinate chicken in buttermilk for at least 4 hours or overnight.
  • In a bowl, mix flour, paprika, cayenne, garlic powder, and salt.
  • Heat oil in a skillet to 350°F (175°C).
  • Remove chicken from buttermilk and let excess drip off.
  • Dredge chicken in the flour mixture until well coated.
  • Fry chicken for about 12-15 minutes until golden brown.
  • Drain on paper towels and let rest.
  • Mix melted butter with additional cayenne to create the hot sauce.
  • Brush hot sauce over the fried chicken before serving.
  • Serve with pickles and bread.
