Preheat your oven to 350°F (175°C).
In a mixing bowl, combine chocolate cookie crumbs and melted butter until well mixed.
Press the crumb mixture into the bottom of a 9-inch pie pan to form the crust.
Bake the crust for 10 minutes, then remove and let cool.
In another bowl, whisk together sugar, cocoa powder, and eggs until smooth.
Stir in the vanilla extract and instant coffee granules, mixing well.
Pour the chocolate mixture into the cooled crust.
Bake for an additional 25 minutes until set but slightly soft in the center.
Remove from the oven and allow to cool completely.
Refrigerate for at least 2 hours before serving.
