Ingredients

  • 1 ½ cups chocolate cookie crumbs
  • ½ cup unsalted butter melted
  • 1 cup granulated sugar
  • ¾ cup unsweetened cocoa powder
  • 1 teaspoon vanilla extract
  • 4 large eggs
  • 1 cup heavy cream
  • ½ cup powdered sugar
  • 1 teaspoon instant coffee granules optional
  • Chocolate shavings for garnish

Instructions

  • Preheat your oven to 350°F (175°C).
  • In a mixing bowl, combine chocolate cookie crumbs and melted butter until well mixed.
  • Press the crumb mixture into the bottom of a 9-inch pie pan to form the crust.
  • Bake the crust for 10 minutes, then remove and let cool.
  • In another bowl, whisk together sugar, cocoa powder, and eggs until smooth.
  • Stir in the vanilla extract and instant coffee granules, mixing well.
  • Pour the chocolate mixture into the cooled crust.
  • Bake for an additional 25 minutes until set but slightly soft in the center.
  • Remove from the oven and allow to cool completely.
  • Refrigerate for at least 2 hours before serving.
