Ingredients

  • 8 oz rotini pasta
  • 2 cups corn fresh or frozen
  • 1 red bell pepper diced
  • 1/4 cup red onion finely chopped
  • 1/2 cup cilantro chopped
  • 1/2 cup mayonnaise
  • 1/4 cup sour cream
  • 1 lime juiced
  • 1 tsp chili powder
  • Salt and pepper to taste

Instructions

  • Cook the rotini pasta according to package instructions; drain and cool.
  • In a skillet, sauté the corn until slightly charred, about 5 minutes.
  • In a large bowl, combine the cooled pasta, corn, red bell pepper, red onion, and cilantro.
  • In a separate bowl, mix the mayonnaise, sour cream, lime juice, chili powder, salt, and pepper.
  • Pour the dressing over the pasta mixture and toss well to combine.
  • Adjust seasoning if necessary.
  • Chill in the refrigerator for at least 30 minutes.
  • Before serving, give the salad a good stir.
  • Garnish with additional cilantro and lime wedges if desired.
  • Serve cold and enjoy!
