In a medium saucepan, mix sugar, corn syrup, and water.
Heat over medium heat until the sugar dissolves.
Remove from heat and let cool slightly.
In a bowl, sprinkle gelatin over 1/2 cup of cold water and let it bloom for 5 minutes.
Add the gelatin mixture to the sugar mixture.
Using a hand mixer, beat on high speed until fluffy (about 10 minutes).
Stir in vanilla and salt, and add food coloring if desired.
Pour the mixture into a greased baking pan.
Let it set for at least 4 hours at room temperature.
Cut into squares and dust with powdered sugar.
