Ingredients

  • 1 lb cooked lobster meat chopped
  • 1/4 cup mayonnaise
  • 1 tablespoon lemon juice
  • 1 tablespoon fresh chives chopped
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste
  • 4 New England-style hot dog rolls
  • Leafy lettuce for garnish
  • Butter for toasting the rolls

Instructions

  • In a medium bowl, combine chopped lobster meat, mayonnaise, lemon juice, chives, and Dijon mustard.
  • Season with salt and pepper to taste, mixing gently to avoid breaking the lobster pieces.
  • Heat a skillet over medium heat and add butter to melt.
  • Split the hot dog rolls and place them in the skillet, cut side down.
  • Toast the rolls until golden brown, about 2-3 minutes.
  • Remove the rolls from the skillet and place lettuce leaves inside each roll.
  • Spoon the lobster mixture generously into each roll.
  • Garnish with extra chives if desired.
