Ingredients

  • 1 cup lentils red or green
  • 1 onion chopped
  • 2 cloves garlic minced
  • 1 inch ginger grated
  • 1 can coconut milk
  • 2 cups vegetable broth
  • 1 tablespoon curry powder
  • 1 teaspoon cumin
  • 1 teaspoon turmeric
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  • Rinse the lentils under cold water and set aside.
  • In a large pot, heat some oil over medium heat.
  • Add the chopped onion and sauté until golden brown.
  • Stir in the minced garlic and grated ginger; cook for 1 minute.
  • Add the curry powder, cumin, and turmeric; stir to combine.
  • Pour in the vegetable broth and coconut milk; bring to a simmer.
  • Add the rinsed lentils to the pot and stir well.
  • Cover and cook for 20-25 minutes, until lentils are tender.
  • Season with salt and pepper to taste.
  • Garnish with fresh cilantro before serving.
