Rinse the lentils under cold water and set aside.
In a large pot, heat some oil over medium heat.
Add the chopped onion and sauté until golden brown.
Stir in the minced garlic and grated ginger; cook for 1 minute.
Add the curry powder, cumin, and turmeric; stir to combine.
Pour in the vegetable broth and coconut milk; bring to a simmer.
Add the rinsed lentils to the pot and stir well.
Cover and cook for 20-25 minutes, until lentils are tender.
Season with salt and pepper to taste.
Garnish with fresh cilantro before serving.
