Ingredients

  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter melted
  • 1 cup granulated sugar
  • 3 8-ounce packages cream cheese, softened
  • 1 cup sour cream
  • ½ cup key lime juice
  • Zest of 2 limes
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions

  • Preheat your oven to 325°F (163°C).
  • Mix graham cracker crumbs and melted butter until combined, then press into a 9-inch springform pan.
  • Bake the crust for 10 minutes and let it cool.
  • In a large bowl, beat cream cheese until smooth.
  • Add sugar and mix well.
  • Mix in sour cream, key lime juice, lime zest, and vanilla.
  • Add eggs one at a time, mixing on low speed.
  • Pour the filling over the cooled crust.
  • Bake for 50-60 minutes until the center is set but slightly jiggly.
  • Let cool before refrigerating for at least 4 hours.
