Remove the thick stems from the kale leaves and tear them into bite-sized pieces.
In a large bowl, toss the kale pieces with olive oil until well coated.
Add sea salt and any optional seasonings, mixing thoroughly.
Spread the kale evenly on a baking sheet in a single layer.
Bake in the preheated oven for 15-20 minutes, checking halfway through.
Remove from the oven when the kale is crispy and slightly browned.
Let the chips cool on the baking sheet for a few minutes.
