Preheat your grill or stovetop skillet over medium-high heat.
Divide the ground beef into 8 equal portions.
Flatten each portion into a thin patty.
Place a slice of cheese in the center of 4 patties.
Top each cheese-filled patty with another patty.
Seal the edges by pressing them together tightly.
Season both sides of the patties with salt and pepper.
Cook for about 6-7 minutes on each side, or until fully cooked.
During the last minute, cover the patties to melt the cheese.
Remove from heat and let rest for a few minutes before serving.
