Ingredients

  • 500 g strong white bread flour
  • 75 g caster sugar
  • 10 g salt
  • 10 g mixed spice powder
  • 10 g instant yeast
  • 300 ml whole milk
  • 40 g unsalted butter melted
  • 1 large egg
  • 200 g mixed dried fruit
  • 100 g glacé cherries
  • 75 g plain flour for the cross
  • 75 g apricot jam for glaze

Instructions

  • In a large bowl, combine the flour, sugar, salt, and mixed spice powder.
  • In a separate bowl, dissolve the yeast in warm milk.
  • Add the melted butter and egg to the milk mixture.
  • Gradually mix the wet ingredients into the dry ingredients.
  • Knead the dough for about 10 minutes until smooth.
  • Incorporate the dried fruit and cherries into the dough.
  • Place the dough in a greased bowl, cover, and let rise for 1 hour.
  • Punch down the dough, then divide into 12 pieces.
  • Shape each piece into a bun and place on a baking tray.
  • Cover and let rise for another 30 minutes. Preheat the oven to 220°C.
  • Mix flour and water for the cross, pipe it on top of the buns.
  • Bake for 20 minutes until golden brown, then glaze with apricot jam.
