Ingredients

  • 1 lb carrots preferably rainbow or baby carrots
  • 3 tablespoons honey
  • 2 tablespoons olive oil
  • Salt to taste
  • Pepper to taste
  • 1 teaspoon fresh thyme or ½ teaspoon dried thyme
  • Sesame seeds optional, for garnish

Instructions

  • Preheat your oven to 400°F (200°C).
  • Wash and peel the carrots, cutting them into uniform sizes.
  • In a large bowl, combine honey, olive oil, salt, pepper, and thyme.
  • Add the carrots to the bowl and toss until evenly coated.
  • Spread the carrots in a single layer on a baking sheet lined with parchment paper.
  • Roast in the preheated oven for 25-30 minutes, turning halfway through.
  • Check doneness by piercing with a fork; they should be tender and slightly caramelized.
  • Once done, remove from the oven and let cool for a few minutes.
  • Drizzle with additional honey if desired.
  • Sprinkle with sesame seeds before serving, if using.
