Wash and peel the carrots, cutting them into uniform sizes.
In a large bowl, combine honey, olive oil, salt, pepper, and thyme.
Add the carrots to the bowl and toss until evenly coated.
Spread the carrots in a single layer on a baking sheet lined with parchment paper.
Roast in the preheated oven for 25-30 minutes, turning halfway through.
Check doneness by piercing with a fork; they should be tender and slightly caramelized.
Once done, remove from the oven and let cool for a few minutes.
Drizzle with additional honey if desired.
Sprinkle with sesame seeds before serving, if using.
