In a mixing bowl, combine ground pork, cabbage, green onions, garlic, and ginger.
Add soy sauce and sesame oil to the mixture and mix well.
Place a gyoza wrapper in your palm and add about 1 tablespoon of filling in the center.
Moisten the edges of the wrapper with water and fold in half.
Crimp the edges to create pleats for a decorative finish.
Heat a tablespoon of oil in a non-stick skillet over medium heat.
Place the gyoza in the skillet and fry until golden brown, about 2-3 minutes.
Add 1/4 cup of water to the skillet and cover immediately to steam.
Cook for an additional 5-7 minutes until the water evaporates and gyoza are cooked through.
Serve hot with your choice of dipping sauce.
