Preheat the oven to 350°F (175°C).
In a skillet, brown the ground beef over medium heat.
Add chopped onion and garlic, cooking until softened.
Stir in cumin, chili powder, salt, and pepper.
Pour half of the enchilada sauce into the beef mixture.
Warm the tortillas in a dry pan to make them pliable.
Fill each tortilla with beef mixture and a sprinkle of cheese.
Roll up each tortilla and place seam-side down in a baking dish.
Pour remaining enchilada sauce over the top and add more cheese.
Bake for 20 minutes or until cheese is bubbly and golden.
