Ingredients

  • 1 lb ground beef
  • 1 small onion chopped
  • 2 cloves garlic minced
  • 1 can 10 oz enchilada sauce
  • 8 corn tortillas
  • 2 cups shredded cheese
  • 1 tsp cumin
  • 1 tsp chili powder
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  • Preheat the oven to 350°F (175°C).
  • In a skillet, brown the ground beef over medium heat.
  • Add chopped onion and garlic, cooking until softened.
  • Stir in cumin, chili powder, salt, and pepper.
  • Pour half of the enchilada sauce into the beef mixture.
  • Warm the tortillas in a dry pan to make them pliable.
  • Fill each tortilla with beef mixture and a sprinkle of cheese.
  • Roll up each tortilla and place seam-side down in a baking dish.
  • Pour remaining enchilada sauce over the top and add more cheese.
  • Bake for 20 minutes or until cheese is bubbly and golden.
