Ingredients

  • 1 zucchini sliced
  • 1 bell pepper sliced
  • 1 yellow squash sliced
  • 1 carrot cut into strips
  • 1 eggplant sliced
  • 1 red onion cut into wedges
  • 3 tablespoons olive oil
  • Salt and pepper to taste
  • Optional: fresh herbs like basil or thyme

Instructions

  • Preheat the grill to medium-high heat.
  • Wash and prepare all the vegetables by slicing them into uniform pieces.
  • In a large bowl, toss the vegetables with olive oil, salt, and pepper.
  • Allow the vegetables to marinate for about 10 minutes.
  • Place the vegetables in a grill basket or directly on the grill grates.
  • Grill the vegetables for 5-7 minutes on each side, until they are tender and have grill marks.
  • Use tongs to flip the vegetables halfway through grilling.
  • Remove the vegetables from the grill and let them cool slightly.
  • Optionally, sprinkle fresh herbs over the grilled vegetables for added flavor.
