Preheat your grill to medium-high heat.
Rinse the fish under cold water and pat dry with paper towels.
Make three diagonal slits on each side of the fish.
Rub the fish inside and out with olive oil, salt, and pepper.
Stuff the cavity of the fish with minced garlic and fresh herbs.
Place lemon slices inside and outside the fish.
Brush the grill grates with oil to prevent sticking.
Place the fish on the grill and cook for 5-7 minutes on each side.
Use a spatula to carefully flip the fish halfway through.
Once cooked, remove the fish from the grill and let it rest for a few minutes before serving.
