Ingredients

  • 1 pound fresh green beans
  • 1/2 cup red onion diced
  • 1/4 cup almonds toasted
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • Salt and pepper to taste

Instructions

  • Wash the green beans thoroughly under cold water.
  • Trim the ends of the green beans.
  • Bring a pot of salted water to a boil.
  • Add the green beans to the boiling water and blanch for 2-3 minutes.
  • Prepare an ice bath in a large bowl with cold water and ice.
  • Transfer the green beans to the ice bath immediately.
  • Drain the green beans and pat them dry.
  • Combine the green beans, diced red onion, and toasted almonds in a mixing bowl.
  • Whisk together olive oil, lemon juice, salt, and pepper in a small bowl.
  • Drizzle the dressing over the salad and toss gently to combine.
