Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup Greek yogurt
  • 1/2 cup sugar
  • 2 large eggs
  • 1/4 cup vegetable oil
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp vanilla extract
  • Optional: 1/2 cup blueberries or chocolate chips

Instructions

  • Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  • In a mixing bowl, whisk together the flour, baking powder, baking soda, and salt.
  • In another bowl, beat the eggs and then add the sugar, Greek yogurt, oil, and vanilla extract.
  • Mix the wet ingredients until well combined.
  • Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  • If using, gently fold in blueberries or chocolate chips.
  • Fill each muffin cup about 2/3 full with the batter.
  • Bake in the preheated oven for 20-25 minutes, or until a toothpick comes out clean.
  • Remove from the oven and let cool in the pan for a few minutes before transferring to a wire rack.
  • Enjoy warm or store for later!
