Ingredients

  • 2 pounds of baby potatoes
  • 1/4 cup olive oil
  • Juice of 2 large lemons
  • 4 garlic cloves minced
  • 1 tablespoon dried oregano
  • Salt and pepper to taste
  • 1 cup vegetable or chicken broth
  • Fresh thyme for garnish

Instructions

  • Preheat your oven to 400°F (200°C).
  • Wash and scrub the baby potatoes thoroughly.
  • In a large bowl, mix olive oil, lemon juice, minced garlic, oregano, salt, and pepper.
  • Add the potatoes to the bowl and toss them until well coated.
  • Place the potatoes in a single layer in a baking dish.
  • Pour the broth over the potatoes.
  • Cover the dish with aluminum foil and bake for 30 minutes.
  • Remove the foil and continue baking for another 30 minutes, or until golden brown.
  • Garnish with fresh thyme before serving.
