Preheat your oven to 350°F (175°C).
In a large bowl, combine the rolled oats and nuts.
In a separate bowl, whisk together honey, oil, vanilla, and salt.
Pour the wet mixture over the oat mixture and stir until well combined.
Spread the mixture evenly on a baking sheet lined with parchment paper.
Bake for 20 minutes, stirring halfway through to ensure even browning.
Remove from the oven and let it cool completely.
Add the dried fruits and mix well.
Store in an airtight container for up to two weeks.
Serve with yogurt or milk, or enjoy it as is!
