Ingredients

  • 2 cups rolled oats
  • 1 cup nut butter peanut or almond
  • 1/3 cup honey or maple syrup
  • 1 cup mixed nuts and seeds
  • 1/2 cup dried fruit cranberries, raisins
  • 1/4 teaspoon salt
  • 1/2 teaspoon vanilla extract

Instructions

  • Preheat your oven to 350°F (175°C).
  • Line an 8x8 inch baking pan with parchment paper.
  • In a large mixing bowl, combine rolled oats, nuts, and seeds.
  • In a small saucepan, melt the nut butter and honey over low heat.
  • Stir in the vanilla extract and salt until combined.
  • Pour the melted mixture over the dry ingredients.
  • Add the dried fruit and mix until everything is well-coated.
  • Transfer the mixture to the prepared baking pan.
  • Press down firmly to create an even layer.
  • Bake for 15-20 minutes until golden brown.
  • Allow to cool completely before cutting into bars.
