Ingredients

  • 6 ripe tomatoes chopped
  • 1 cucumber peeled and diced
  • 1 bell pepper diced
  • 1 small red onion chopped
  • 2 cloves garlic minced
  • 3 cups tomato juice
  • 3 tablespoons olive oil
  • 2 tablespoons red wine vinegar
  • Salt and pepper to taste
  • Fresh basil or parsley for garnish

Instructions

  • Wash all the vegetables thoroughly.
  • Chop the tomatoes, cucumber, bell pepper, and onion into small pieces.
  • Mince the garlic cloves finely.
  • In a blender, combine the chopped tomatoes and tomato juice.
  • Add the diced cucumber, bell pepper, onion, and garlic to the blender.
  • Pour in the olive oil and red wine vinegar.
  • Season with salt and pepper to taste.
  • Blend until smooth, or to your desired texture.
  • Taste and adjust seasoning if necessary.
  • Chill in the refrigerator for at least 2 hours before serving.
