Wash and peel the potatoes.
Cut the potatoes into evenly sized strips (about 1/4 inch thick).
Soak the cut potatoes in cold water for at least 30 minutes to remove excess starch.
Drain and pat the potatoes dry with a clean towel.
Heat vegetable oil in a deep fryer or large pot to 350°F (175°C).
Carefully add a batch of fries to the hot oil, avoiding overcrowding.
Fry for about 5-7 minutes or until golden brown and crispy.
Remove fries and drain on paper towels; sprinkle with salt.
Repeat with the remaining fries.
Serve hot with your favorite dipping sauce.
