Ingredients

  • 2 fish fillets cod or tilapia
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 1 lemon sliced
  • 1 cup mixed vegetables zucchini, bell pepper, carrots
  • Fresh herbs thyme or parsley

Instructions

  • Preheat the oven to 400°F (200°C).
  • Rinse the fish fillets under cold water and pat dry.
  • Place the fillets on a baking sheet lined with parchment paper.
