Ingredients

  • 2 cups all-purpose flour
  • 1 cup warm milk 110°F
  • 2 tablespoons sugar
  • 1 packet instant yeast 2 1/4 teaspoons
  • 1 teaspoon salt
  • 1 tablespoon unsalted butter melted
  • Cornmeal for dusting

Instructions

  • In a bowl, combine warm milk, sugar, and yeast; let it sit for 5 minutes.
  • In a separate bowl, mix flour and salt.
  • Add the yeast mixture and melted butter to the flour; stir until a dough forms.
  • Knead the dough on a floured surface for about 5 minutes.
  • Place the dough in a greased bowl, cover with a cloth, and let it rise for 1 hour.
  • Punch down the dough and roll it out to about 1-inch thickness.
  • Cut out rounds using a biscuit cutter and place on a cornmeal-dusted baking sheet.
  • Cover and let rise for another 30 minutes.
  • Preheat a skillet over medium heat; cook muffins for about 7 minutes on each side.
  • Let them cool before slicing and toasting.
