Stir in the coleslaw mix and shredded carrots.
Pour in the soy sauce and sesame oil, mixing well.
Season with salt and pepper to taste.
Cook until the vegetables are tender, about 5 minutes.
Remove from heat and stir in sliced green onions.
Serve hot, garnished with more green onions if desired.
For added heat, drizzle with Sriracha before serving.
