Ingredients

  • 2 medium eggplants sliced
  • 2 cups marinara sauce
  • 2 cups shredded mozzarella cheese
  • 1 cup grated Parmesan cheese
  • 1 cup all-purpose flour
  • 3 eggs beaten
  • 2 cups breadcrumbs
  • Olive oil
  • Fresh basil leaves
  • Salt and pepper to taste

Instructions

  • Preheat your oven to 375°F (190°C).
  • Slice the eggplants into 1/4-inch thick rounds.
  • Sprinkle salt on the eggplant slices and let them sit for 30 minutes.
  • Rinse and pat the eggplant slices dry.
  • Dredge each slice in flour, dip in beaten eggs, and coat with breadcrumbs.
  • Fry the eggplant slices in olive oil until golden brown.
  • Spread a layer of marinara sauce in a baking dish.
  • Layer half of the fried eggplant, followed by sauce and cheeses.
  • Repeat the layers and finish with cheese on top.
  • Bake for 25-30 minutes until bubbly and golden.
