Ingredients

  • 2 cups diced vegetables carrots, potatoes, celery
  • 1 cup cooked protein chicken, beef, or beans
  • 4 cups vegetable or chicken broth
  • 1 can diced tomatoes 14 oz
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • Fresh herbs thyme, parsley for garnish

Instructions

  • Prepare all vegetables by washing and dicing them.
  • In the crockpot, combine the diced vegetables.
  • Add the cooked protein of your choice.
  • Pour in the broth and add diced tomatoes.
  • Season with garlic powder, onion powder, salt, and pepper.
  • Stir all ingredients to combine well.
  • Cover the crockpot with the lid.
  • Set the crockpot to low for 6-8 hours or high for 3-4 hours.
  • Once cooked, taste and adjust seasoning if necessary.
  • Serve hot, garnished with fresh herbs.
