Ingredients

  • 1 lb of chicken or beef
  • 4 cups of broth chicken or vegetable
  • 2 cups of mixed vegetables carrots, peas, corn
  • 1 onion diced
  • 2 cloves garlic minced
  • 1 tsp dried thyme
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 bay leaf
  • 2 cups of potatoes diced

Instructions

  • Gather all ingredients and prepare them as listed.
  • Place the chicken (or beef) at the bottom of the crockpot.
  • Add the diced onion and minced garlic on top of the meat.
  • Layer the mixed vegetables over the onions and garlic.
  • Sprinkle the thyme, salt, and pepper evenly across the top.
  • Pour in the broth, ensuring all ingredients are submerged.
  • Add the bay leaf and diced potatoes.
  • Cover the crockpot with the lid securely.
  • Set to low for 6-8 hours or high for 3-4 hours.
  • Once cooked, remove the meat to shred, then return it to the pot and stir well.
