Ingredients

  • 1 cup fresh crab meat
  • 1/2 cup diced cucumber
  • 1/2 cup cherry tomatoes halved
  • 1/4 cup shredded carrots
  • 1/4 cup diced red bell pepper
  • 1/4 cup mayonnaise
  • 1 tablespoon lemon juice
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  • In a large mixing bowl, combine the fresh crab meat, diced cucumber, cherry tomatoes, shredded carrots, and red bell pepper.
  • In a separate small bowl, whisk together mayonnaise, lemon juice, and Dijon mustard until smooth.
  • Pour the dressing over the crab mixture and gently toss to combine.
  • Season with salt and pepper to taste.
  • Chill the salad in the refrigerator for about 10 minutes.
  • Prepare a serving platter with a bed of mixed greens.
  • Remove the salad from the refrigerator.
  • Mound the crab salad on top of the mixed greens.
  • Garnish with fresh parsley for a pop of color.
  • Serve immediately and enjoy this refreshing dish!
