Ingredients

  • 1 cup cottage cheese
  • 1 cup all-purpose flour
  • 1/2 cup sugar
  • 1/4 cup unsalted butter melted
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • Optional: powdered sugar for dusting

Instructions

  • Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  • In a mixing bowl, combine the cottage cheese, melted butter, and sugar.
  • Beat in the eggs one at a time until well combined.
  • Add the vanilla extract and mix thoroughly.
  • In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.
  • Gradually fold the dry ingredients into the wet mixture until just combined.
  • Scoop the batter into the prepared muffin tins, filling each about 2/3 full.
  • Bake for 20-25 minutes or until a toothpick inserted into the center comes out clean.
  • Allow the muffins to cool in the pan for 5 minutes before transferring them to a wire rack.
  • Dust with powdered sugar if desired, and enjoy!
