Ingredients

  • 1 cup cottage cheese
  • 1 cup all-purpose flour
  • 1 egg
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1 tbsp olive oil
  • Fresh herbs optional
  • Toppings like tomatoes, greens, or yogurt

Instructions

  • In a mixing bowl, combine cottage cheese, flour, baking powder, and salt.
  • Add the egg and mix until a dough forms.
  • Knead the dough gently on a floured surface for 2-3 minutes.
  • Divide the dough into four equal pieces.
  • Roll each piece into a flat round shape, about 1/4 inch thick.
  • Heat a non-stick skillet over medium heat and add olive oil.
  • Place one flatbread in the skillet and cook for 3-4 minutes until golden brown.
  • Flip the flatbread and cook for another 2-3 minutes.
  • Repeat with remaining dough pieces.
  • Serve warm with your choice of toppings.
