Ingredients

  • 1 cup cottage cheese
  • 4 large eggs
  • 1/2 cup shredded cheese
  • 1/4 cup diced bell peppers
  • 1/4 cup chopped spinach
  • 1/4 teaspoon garlic powder
  • Salt and pepper to taste
  • Fresh herbs for garnish optional

Instructions

  • Preheat your oven to 350°F (175°C).
  • Grease a muffin tin or use silicone molds.
  • In a large bowl, whisk together the eggs and cottage cheese.
  • Stir in the shredded cheese, bell peppers, and spinach.
  • Add garlic powder, salt, and pepper, mixing well.
  • Pour the mixture evenly into the muffin tin.
