Ingredients

  • 2 cups fresh corn cooked and cooled
  • 1 cup cherry tomatoes halved
  • 1 avocado sliced
  • 1/2 red onion thinly sliced
  • 1/4 cup fresh cilantro chopped
  • 1 lime juiced
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  • Gather all ingredients and utensils.
  • Cook the corn if using fresh corn; allow it to cool.
  • In a large bowl, combine the corn, cherry tomatoes, and red onion.
  • Add the chopped cilantro to the bowl.
  • Slice the avocado and set aside.
