Ingredients

  • 1 pound large shrimp peeled and deveined
  • 1 cup shredded coconut
  • 1 cup panko breadcrumbs
  • 2 large eggs
  • 1/2 cup all-purpose flour
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp garlic powder
  • Oil for frying
  • Dipping sauce sweet chili or mango sauce

Instructions

  • Rinse and pat shrimp dry.
  • Mix flour with salt, pepper, and garlic powder in one bowl.
  • Whisk the eggs in a second bowl.
  • Combine shredded coconut and panko breadcrumbs in a third bowl.
  • Dredge shrimp in the flour mixture, shaking off excess.
  • Dip shrimp into the beaten eggs.
  • Coat shrimp with the coconut-panko mixture.
  • Heat oil in a skillet over medium heat.
  • Fry shrimp in batches for 2-3 minutes on each side until golden brown.
  • Remove shrimp and let them drain on paper towels before serving.
