  • 1 cup grated zucchini
  • 1 cup all-purpose flour
  • 1/2 cup cocoa powder
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup chocolate chips

Instructions

  • Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  • In a mixing bowl, combine grated zucchini, sugar, and brown sugar.
  • Add vegetable oil, eggs, and vanilla extract to the zucchini mixture, and mix well.
  • In a separate bowl, whisk together flour, cocoa powder, baking soda, and salt.
  • Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  • Fold in the chocolate chips gently.
  • Fill each muffin cup about 2/3 full with the batter.
  • Bake in the preheated oven for 20-25 minutes or until a toothpick comes out clean.
