Wash the strawberries under cold water and pat them dry.
Prepare a baking sheet lined with parchment paper.
Chop the dark chocolate and place it in a microwave-safe bowl.
Melt the chocolate in the microwave in 30-second intervals, stirring in between.
If using, mix in coconut oil for a shinier finish.
Hold a strawberry by the stem and dip it into the melted chocolate.
Allow excess chocolate to drip off before placing it on the baking sheet.
Repeat with all strawberries, leaving space between them.
If desired, melt white chocolate and drizzle it over the dipped strawberries.
Refrigerate the strawberries for 30 minutes to set the chocolate.
