Ingredients

  • 4 bone-in skin-on chicken thighs
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1 cup mixed vegetables carrots, bell peppers, broccoli
  • Fresh parsley for garnish

Instructions

  • Preheat your oven to 400°F (200°C).
  • Pat the chicken thighs dry with paper towels.
  • In a large bowl, mix olive oil, garlic powder, paprika, salt, and pepper.
  • Add the chicken thighs to the bowl and coat them evenly with the spice mixture.
  • Place the chicken thighs skin-side up on a baking sheet.
  • Arrange the mixed vegetables around the chicken on the baking sheet.
  • Roast in the preheated oven for 35-40 minutes or until the chicken reaches an internal temperature of 165°F (75°C).
  • Remove from the oven and let the chicken rest for 5 minutes.
