Ingredients

  • 2 cups cooked shredded chicken
  • 1 can 15 oz black beans, drained and rinsed
  • 1 can 15 oz corn, drained
  • 1 can 10 oz diced tomatoes with green chilies
  • 1 packet taco seasoning
  • 2 cups tortilla chips crushed
  • 1 cup shredded cheddar cheese
  • 1 cup sour cream
  • 1/2 cup chopped green onions
  • Fresh cilantro for garnish

Instructions

  • Preheat your oven to 350°F (175°C).
  • In a large mixing bowl, combine shredded chicken, black beans, corn, diced tomatoes, and taco seasoning.
  • Stir the mixture until all ingredients are well incorporated.
  • In a greased 9x13 inch baking dish, layer half of the crushed tortilla chips at the bottom.
  • Spread the chicken mixture evenly over the chips.
  • Add a layer of sour cream over the chicken mixture.
  • Sprinkle the remaining crushed tortilla chips on top.
  • Finish with a generous layer of shredded cheddar cheese.
  • Bake in the preheated oven for 25-30 minutes, until the cheese is melted and bubbly.
  • Remove from the oven, garnish with chopped green onions and cilantro before serving.
