Ingredients

  • 2 boneless skinless chicken breasts
  • 1 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1 cup marinara sauce
  • 1 cup shredded mozzarella cheese
  • 1/2 cup all-purpose flour
  • 2 large eggs
  • Salt and pepper to taste
  • Olive oil for frying
  • Fresh basil for garnish optional

Instructions

  • Preheat your oven to 375°F (190°C).
  • Flatten the chicken breasts to an even thickness using a meat mallet.
  • Season the chicken with salt and pepper.
  • Set up a breading station with three bowls: one with flour, one with beaten eggs, and one with breadcrumbs mixed with Parmesan cheese.
  • Dredge each chicken breast in flour, shaking off excess.
  • Dip the floured chicken into the beaten eggs.
  • Coat the chicken thoroughly with the breadcrumb mixture.
  • Heat olive oil in a skillet over medium heat and fry the chicken until golden brown, about 4-5 minutes per side.
  • Transfer the fried chicken to a baking dish, top with marinara sauce, and sprinkle with mozzarella cheese.
  • Bake in the oven for 20 minutes or until the cheese is bubbly and golden.
