Ingredients

  • 2 boneless skinless chicken breasts
  • 1 cup all-purpose flour
  • 2 large eggs
  • 1 cup breadcrumbs preferably Italian-style
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Olive oil for frying
  • Fresh parsley for garnish

Instructions

  • Flatten the chicken breasts to an even thickness, about 1/2 inch.
  • Season the chicken with salt and pepper on both sides.
  • Set up a breading station with flour, beaten eggs, and breadcrumbs mixed with Parmesan.
  • Dredge each chicken breast in flour, then dip in eggs, and finally coat with breadcrumbs.
  • Heat olive oil in a skillet over medium heat until shimmering.
  • Add the breaded chicken to the skillet and cook until golden brown, about 4-5 minutes per side.
  • Transfer the chicken to a paper towel-lined plate to drain excess oil.
  • Garnish with fresh parsley and serve immediately.
