Ingredients

  • 2 cups cooked chicken shredded
  • 1 cup bell peppers sliced (red, green, yellow)
  • 1 medium onion sliced
  • 1 can 15 oz black beans, drained and rinsed
  • 1 cup corn
  • 1 cup salsa
  • 1 tsp chili powder
  • 1 tsp cumin
  • 1 cup shredded cheese cheddar or Mexican blend
  • 6 tortillas cut into strips

Instructions

  • Preheat your oven to 375°F (190°C).
  • In a large bowl, combine the shredded chicken, bell peppers, onion, black beans, corn, salsa, chili powder, and cumin.
  • Layer half of the tortilla strips in the bottom of a greased 9x13 inch baking dish.
  • Spread half of the chicken mixture over the tortillas.
  • Sprinkle half of the cheese on top of the chicken mixture.
  • Repeat the layers with the remaining tortilla strips, chicken mixture, and cheese.
  • Cover the dish with aluminum foil and bake for 20 minutes.
  • Remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden.
  • Let it cool for a few minutes before serving.
