Ingredients

  • 1 whole chicken about 3-4 lbs
  • 2 medium onions quartered
  • 3 carrots chopped
  • 3 celery stalks chopped
  • 4 garlic cloves smashed
  • 1 bay leaf
  • 10-12 cups of water
  • Salt and pepper to taste
  • Fresh herbs parsley, thyme

Instructions

  • Place the whole chicken in a large pot.
  • Add the quartered onions, chopped carrots, and celery to the pot.
  • Smash the garlic cloves and add them to the pot.
  • Pour in enough water to cover the chicken and vegetables (about 10-12 cups).
  • Add the bay leaf and season with salt and pepper.
  • Bring the mixture to a boil over medium-high heat.
  • Once boiling, reduce the heat to low and let it simmer.
  • Skim off any foam that rises to the surface for a clearer broth.
  • Simmer for about 2 hours, or until the chicken is cooked through and tender.
  • Remove the chicken and vegetables, and strain the broth into a clean pot.
