Ingredients

  • 2 boneless skinless chicken breasts
  • 1 cup low-sodium chicken broth
  • 1 cup diced tomatoes canned
  • 1 onion chopped
  • 2 cloves garlic minced
  • 1 teaspoon dried oregano
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Optional: fresh herbs for garnish

Instructions

  • Prepare all ingredients and have them ready.
  • Place the chicken breasts at the bottom of the crockpot.
  • Sprinkle salt, pepper, oregano, and paprika over the chicken.
  • Add chopped onions and minced garlic on top.
  • Pour in the diced tomatoes and chicken broth.

  • Check the chicken for doneness; it should reach 165°F (75°C).
  • Once cooked, shred the chicken in the pot using two forks.
  • Mix everything together before serving.
